Tummy Pleasing Tuesday

 Two new to us recipes that have wowed us are:

Creamy Southwestern Taco Soup

 Chicken Enchilada Bowl Casserole

  1    medium      onion; chopped
  2    tablespoon      vegetable oil                     
  4    cups      chicken or turkey; cooked & shredded
  1    can      tomato sauce, 15 oz.              
  1    can      whole, peeled tomatoes, 14 1/2 oz.; undrained and cut up
  1    package      taco seasoning                    
  1/2    teaspoon      garlic powder                     
  3    cups      jack cheese, 12 oz.; grated
  


Saute' onion in oil. Add chicken, tomato sauce, tomatoes, seasoning packet and garlic; blend well. Bring to a boil; reduce heat and simmer, uncovered, 15 min. In 9x13 glass dish place 1/2 of chicken mixture on bottom of dish, spreading evenly. Layer with 1/2 of cheese. Repeat layer ending with cheese. Bake in 350 oven 30 - 40 min. or until heated through and cheese melts.

Serve over tortilla chips for kiddos and lettuce for parents (THM S).



  Both of these recipes are low carb and incredibly delicious and filling (and THM S).
